Fun, tasty and great to share for brunch, lunch or at parties. It is filled with bacon, spinach, sundried tomatoes and cheese in a pastry shell.

The bacon and spinach taste delicious. It can be altered to make vegetarian, or for low FODMAP, lactose and gluten free requirements.

Delicious, fun to make and share savoury twist

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 1 Twist, 8 slices

2 sheets puff pastry, defrosted (gluten free if required)
1 tablespoon oil
1 clove garlic, crushed (exclude for low FODMAP)
1 cup sliced bacon (exclude for a vegetarian option)
2 1/2 cups baby spinach
1/4 cup sundried tomatoes (or 1 large tomato, diced)
1 - 2 tbsp sundried tomato oil (from the jar)
1 cup grated cheese (or lactose free cheese, if required)
1 egg, beaten
Pepper, to season

Preheat the oven to 220 degrees. Put baking paper on a baking tray.
Cut two large circles out of the pastry. I placed a 23cm bowl on the pastry and cut around the outside.
Sauté the garlic in oil on high heat in a frypan for 1 minute.
Add the bacon and fry until browned, about 2 minutes.
Turn the heat to medium, add the spinach and stir until wilted, about 1 minute.
Brush one of the pastry circles with sundried tomato oil. Spread the spinach, bacon, sundried tomatoes and cheese on top, allowing a 3 cm edge free.

Allow a 3 cm edge free of ingredients to seal the top and bottom

Place the second pastry circle on top and seal with a fork.
Place a 5 cm glass in the middle of the pastry and gently press down, so it depresses but does not cut the pastry. Use a knife to cut 8 equal slices from the outside to the glass.

Gently twist each slice once and seal the end with a fork.

Brush with egg.
Bake for 20 minutes or until the pastry is golden brown.
