These potato cakes are first boiled, then mashed, and the cooked bacon is added before frying them.
I used both potato and sweet potato as I had some sweet potato I wanted to use, however this would also work with just potato.
They make a nice accompaniment and are good as a snack both hot and cold.

200 g potatoes
100 g sweet potato
2 tsp butter
3 short cut bacon rashers, chopped small
1 tbsp chives, chopped
2 tbsp rolled oats
Bit of flour
1 very small egg
Extra plain flour
#Hot or cold
I also put a bit of flour on the outside to hold them together as my egg was a bit big
