Banana and Oat Loaf

This banana and oat loaf makes a substantial breakfast or brunch. It's quick to make and excellent toasted with syrup.

Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 1 loaf

3/4 cup milk
3/4 cup sugar
2 eggs
3 bananas, mashed
1/2 cup rolled oats
2 cups SR flour
2 tsp cinnamon

Preheat the oven to 180C and grease and line a large loaf pan.
Combine the milk, sugar, eggs and bananas in a bowl, mix well.

Add the oats, flour and cinnamon to the bowl and mix to combine.

Pour the mixture into the prepared loaf pan and bake for 60 minutes or until a skewer inserted into the centre comes out clean.

Allow the loaf to cool in the pan for 10 minutes before turning it onto a wire rack to cool completely.
