Quick and Easy Feta Scrambled Eggs Brunch

I had some feta left over and have spinach growing in my garden, so I decided to use them up for brunch.

It was a nice combination, mixed with some tomatoes.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Serves: 1

2 eggs
About 30 g spinach
½ tomato chopped
65 g feta, crumbled
1 small shallot

Melt a knob of butter or coconut oil in a frypan over a medium heat.

Fry the onions for about 5 minutes until they become transparent.

Beat the eggs, add the chives, and add.


Cook, stirring sometimes till they are ALMOST done - they are nicer if not dried out.

Stir in the chopped tomatoes and feta cheese.


Add pepper and cook for another minute or so until the cheese melts.

Add the spinach leaving a bit to serve on the side.

Serve on toast.
