Vanilla Magic Custard Cake

This vanilla magic custard cake will be sure to wow your family. It has a lovely dense base, a creamy custard filling and a soft spongy top layer that will leave everyone wondering how you made it.

Preparation Time: 20 minutes
Cooking Time: 50-55 minutes
Serves: 6-8

4 large eggs, separated
3/4 cup sugar
2 tbs cold water
110 g butter, melted
3/4 cup plain flour
pinch of salt
2 cups milk
2 tsp vanilla extract
icing sugar to dust

Preheat the oven to 160C and grease and line a baking dish with baking paper.
Using a mixer, beat together the egg yolks, sugar and water until the mixture is pale and creamy and the sugar has dissolved. This should take around 5 minutes.
Mix in the butter, then the flour, salt, milk and vanilla. Set aside.

In another bowl, beat the egg whites until stiff and peaks form.

Fold the egg whites into the egg yolk mixture. Do not over mix, you want to leave large clumps of egg whites floating on the surface.

Transfer the mixture to your baking dish and bake for 50-55 minutes until the top is golden but the cake is still jiggly in the centre.

Allow the cake to come to room temperature before placing it in the fridge for a minimum of 4 hours.
Before serving, sprinkle with icing sugar.
