Banana Cake with Cream Cheese Frosting

Banana cake takes me back to my childhood, my mother would make this as a special treat for our family and I now make it as a special treat for my own family.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Serves: 10

Banana Cake
1/2 cup butter
1/2 cup sugar
1 tsp vanilla essence
2 eggs
3 bananas, mashed
1 1/2 cups SR flour
1 tsp bi carb soda
50 ml milk

Cream Cheese Frosting
125 g cream cheese
50 g butter, room temperature
1 1/2 cups icing sugar mixture
1 1/2 tsps milk

Preheat oven to 180C. Grease and line a 20cm round cake tin.
Beat the butter, sugar and vanilla. Mix in the eggs and banana.
Add the flour, bi carb and milk. Beat for 2 minutes.

Pour the mixture into your prepared tin and bake for 30 - 35 minutes.

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Once the cake has cooled, prepare your frosting by beating the cream cheese and butter until well combined.
Add the icing sugar and beat until combined. Pour in the milk and continue beating until pale and creamy.

Spread the cream cheese frosting over the top and/or down the sides of the banana cake before serving.
