Satay Egg and Chicken Salad Wrap

I did not feel like cooking this particular night, so made up a wrap using things I had in the fridge or freezer.

Turned out delicious and a great combination.

Preparation Time: 15 minutes
Cooking Time: 0 minutes
Serves: 1 - 2

1 large egg, hard boiled
1 tbsp yogurt
Bit of curry powder
tbsp peanut butter
1 soft wrap of any kind
1 lettuce leaf
75 g cooked chicken breast, shredded
carrot, grated
20 g snow pea sprouts

Put the egg in a small bowl and mash with a fork.

Add the yogurt and curry powder, to taste, and season with and pepper. Stir to mix.

Spread the peanut butter over the wrap, and top with the egg mixture.


Add the lettuce, chicken, carrot and snow pea sprouts.


Roll carefully to enclose the filling - do not fill too full as I did, as it is difficult to roll then!

Slice in half and serve
