Bacon and Feta Impossible Pie

Impossible pie's make a fantastic meal because they're quick to prepare, form their own base and you can change the flavours to suit what is in your fridge. They are perfect served with a simple garden salad.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 6

Ingredients
5 eggs
1/2 cup milk
1/2 cup SR flour
1/2 onion, diced finely
150 g bacon
50 g feta

Method
Preheat the oven to 180C and grease a 30cm round pie dish.
Whisk together the eggs, milk and flour. Stir in the onion, bacon and feta.
Transfer the mixture to the pie dish and bake for 35-40 minutes or until golden and set.

Remove from the oven and allow the pie to cool for 10 minutes before serving.

Can be served hot, cold or at room temperature.
