Creamy Bacon and Feta Potato Bake

Potato bake is a great side for many family meals, but the addition of bacon and feta really elevates this classic dish.

Preparation Time: 20 minutes
Cooking Time: 60 minutes
Serves: 4

1.2 kg potatoes
150 g bacon
75 - 100 g feta, crumbled
300 ml thickened cream
1 cup grated cheese

Preheat the oven to 180C. Grease a 1 litre capacity baking dish.
To prepare the potato bake you will need to have all your ingredients prepared and close at hand. Peel and thinly slice the potatoes. Dice the bacon.

Place a layer of potato on the bottom of your baking dish. Top with a sprinkling of bacon and feta. Repeat until you have used all of the potato and bacon.
Pour over the thickened cream and top with the grated cheese and any remaining feta.

Bake for 60 minutes or until the top is golden and the potato is tender.
Serve hot.

If your potato bake is browning too quickly, cover it with alfoil to stop it browning.
