Asparagus and Cheese Casserole

You could serve the casserole with a simple salad, but I had some tofu in the fridge that needed to be eaten, so I made this special fried rice.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 2 - 3

280 g jar asparagus, cut into smaller pieces
1 tbsp butter
1 cup milk
cup blue cheese, crumbled
1 tbsp plain flour
1 hard boiled egg
Mustard, to taste

Preheat the oven to moderate temperature.

Melt the butter and stir in the flour.

Mix thoroughly and add mustard and salt to taste.

Add the milk, and bring to the boil.

In a casserole dish, put the combined asparagus, cheese and chopped egg.


Add the white sauce, and bake for about 25 minutes.


Serve with chopped parsley on top - optional.

I served this with my vegan fried rice.
