Roasted Cinnamon Sweet Potatoes

Sweet potatoes are a great complex carbohydrate packed with the nutrients Vitamin A and beta-carotene. My roasted cinnamon sweet potatoes are the perfect quick and tasty side dish to accompany BBQ meats, such as burgers, steaks, sausages or chicken. I like the slight sweetness of the roasted sweet potatoes, with the cinnamon and garlic mixture giving it a more savoury feel. If there are any leftovers, I like to put them into a salad for lunch the next day.

Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 2-3 servings

1 large sweet potato
2 tablespoons olive oil
1/2 teaspoon cinnamon
1/2 teaspoon garlic powder
Sprinkle of salt and pepper

The seasonings

Peel and wash the sweet potato.

Peeled and washed

Cut the sweet potato into small cubes, approximately 1.5 cm x 1.5 cm.
Line a large baking tray with parchment paper.
Put the cubes onto the baking tray, no need to arrange them yet.
Pour the olive oil onto the sweet potatoes and toss with your fingers.
Arrange the sweet potatoes into one layer.
Sprinkle cinnamon, garlic powder, salt and pepper over the sweet potatoes.

Ready for the oven

Bake in a 350F (180C) convection oven for 40 minutes.

To serve, dip the sweet potatoes in ketchup and aioli.
