Hot Bananas with Rum and Raisins

This is an easy dessert, and one which uses little added sugar.

You can make it either with dark rum, or as I did, with almond essence, as I had run out of rum!

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Serves: 3 - 4

40 g seedless raisins or sultanas
75 ml dark rum or almond essence
45 g butter
1 tbsp coconut sugar
3 - 4 ripe bananas
¼ tsp nutmeg
¼ tsp cinnamon
2 tbsp slivered almonds

Put the sultanas in a bowl with the rum.

Leave them to soak while you make the bananas.


Melt the butter in a frying pan.

Add the sugar and stir until it has dissolved.

Add the bananas and cook for a few minutes until tender.

Sprinkle the spices over the bananas, then pour over the rum and sultanas.

Scatter the slivered almonds on top. immediately.


Add some chilled cream, or ice cream, and serve. Can be heated up the next day.
