Baked Caramelised Chicken

I got this recipe from a friend who makes it regularly though with her, it was sort of hit and miss, as she does not use measurements!

Really delicious, it is an easy recipe even though it has quite a few ingredients.

Preparation Time: 15 minutes
Cooking Time: 1½ hours
Serves: 3 - 4

4 chicken Marylands (leg and thigh)
2 - 3 onions, quartered
4 potatoes, quartered
2 tbsp tomato sauce
Bit of Thyme
2 tbsp honey
Pinch chili, or to taste
2 tbsp balsamic vinegar
2 tbsp soy sauce
1 tbsp pomegranate sauce
¼ cup oil
Cherry tomatoes, optional

Preheat the oven to 180°/165° fan forced.

Put the onions and potatoes in the bottom of a casserole dish.

Cut the chicken legs from the thighs, and put these on top of the potatoes.

Mix together all the other ingredients until combined.


Pour this mixture over the chicken in the casserole dish.


Bake until it is caramelised - this COULD take slightly longer than 1½ hours depending on your oven. Open the oven a few times during the cooking, and baste the chicken with the gravy accumulating.


Optional to put cherry tomatoes on the top after an hour or so of cooking.

Although I usually buy skinless chicken, this recipe would be nicer with skin left on!
