This was a quick, easy meal which I think is a Mexican style of food.
Make it as hot or not as you want - it is delicious!
Preparation Time: 5 minutes
Cooking Time: 0 minutes plus standing time
Serves: 1 - 2
Ingredients
250 g prawns, shelled
¼ onion or shallot
1½ tomatoes, diced
1 Jalapeno, diced - optional
1½ limes
½ cup avocado, diced
¼ cup coriander
1 small garlic clove - optional
1 tsp Worcestershire sauce
2 corn tortillas or similar
Method
Grate the rind from the limes till you have about ½ tbsp and juice about 3 tbsp of juice.
Add the prawns, cover and let them chill for up to an hour - they will turn pink and be cooked.
Add the tomato, salt and pepper, and the remaining ingredients apart from tortillas and mix well to combine.
Heat the tortillas in the microwave or grill them.
If the prawns are not cooked, take them out of the lime juice and zap them for a minute in the microwave.
Mix the prawns in with the other ingredients.
You can either roll them up or eat them flat - I rolled them.
