Chicken and Giblet Paprika and Soup

This is another recipe that I got from my mother who was from Europe and cooked continental dishes mainly.

If you do not like giblets, you can make it all with chicken however giblets are tasty, melt in your mouth meat if cooked correctly.

Preparation Time: 30 minutes
Cooking Time: 15 minutes plus 8 hours slow cooker if using
Serves: 4

1 kg giblets
For the soup
3 chicken frames
1 chicken thigh
2 sticks celery
1 onion
1 parsnip
About 6 brussel sprouts
2 carrots
1 tsp chicken powder

For the Chicken Paprika
1 - 2 tsp paprika powder
1 large onion

Make your chicken - I made the soup first the day before and then shredded the chicken into pieces. I also added the cooked giblets - optional.


Put some chicken fat or oil in a pan and chop some onions and add about 1 - 2 tsp paprika powder.

When the onions are a bit brown, add a small tin of tomato paste.


Stir and add about one scoop of plain flour and a bit of water. Add some of the soup and stir till it gets thick.

Then add some more soup and the cooked chicken (and/or giblets) till hot.


Cover and cook for a few minutes and serve with either rice or boiled potatoes.
