Chocolate Orange Truffle Cake

Orange and chocolate are a match made in heaven, and this truffle cake is certainly heavenly. When I'm in a restaurant I am always wary of ordering chocolate cake because so often they are very dry. This cake, which I made for my dad's birthday, however, uses ground almonds instead of flour, which I think helps make it extra moist. Based on the brands I used, each slice is about 237 calories.

Preparation Time: 40 minutes
Cooking Time: 50 minutes
Makes: 12 servings

1 orange
75g Truvia sweetener (or caster sugar if you prefer)
100g ground almonds
350g orange flavoured dark chocolate
3 large eggs
1/2 tsp baking powder
3 tbsp clear honey

Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Zest and juice your orange.
Melt 200g chocolate and stir in orange juice, then mix into the ground almonds and baking powder.
Separate the eggs and beat the yolks with half the sweetener/sugar, then beat into the mixture.
Whisk the egg whites to soft peaks with the rest of the sweetener/sugar, and fold into the mixture.
Bake in a cake tin in the oven.
Melt 150g chocolate with the orange zest and honey, then pour it over the cake and allow it to set.
