Profiteroles with Custard Filling

Profiteroles, cream puff or choux à la crème, whichever name you like to call it. They are a French dessert made from a choux pastry ball filled with whipped cream, pastry cream, custard or even ice-cream. Simple yet flavoursome, they are fun to make and make the perfect dessert.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 10 servings

Choux Pastry
1 cup water
80g unsalted butter
1 cup plain flour
Pinch of salt
2 tsp sugar
4 eggs

Custard Filling
1 cup milk
3/4 cup cream
1 tsp vanilla essence
2 egg yolks
1/3 cup caster sugar
1/3 cup plain flour

50g milk or dark chocolate

Preheat oven to 180°C and line a baking tray.

Place the water and butter in a saucepan and bring it to the boil. Remove from heat.

Meanwhile sift together flour, salt and sugar together.

Combine the dry ingredients into the butter mixture.

Stir the ingredients over medium heat until it forms a dough. Remove from heat and allow it to cool for 5 minutes.

Beat in eggs until well combined

Place the batter into a piping bag.

Pipe round balls onto the prepared tray. Alternatively you can place spoonfuls onto the tray instead of piping.

Bake for 20 minutes or until puffed and golden.

Use a knife and cut an opening on each pastry puff.

For the custard filling, beat together the sugar and eggs and add the flour.

Place milk, cream and vanilla essence in a saucepan over medium heat but do not boil.

Gradually whisk in the egg mixture to the milk until the mixture thickens. Place in the refrigerator to chill.

Pipe or spoon the custard mixture into the puff pastry.

For the chocolate, melt the chocolate in the microwave for 45 seconds, stirring every 15 seconds. Spoon over the pastry.
