Proper Veggie Burrito

Getting the right balance of flavours in a burrito can be tough, and restaurants never seem to get it right, especially in vegetarian dishes, so I made my own. Filling, healthy, and delicious, this is my recipe for a veggie burrito.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
1/4 of a packet of vegan mince
Half a tin of chopped tomatoes
2 tblsp tomato puree
Half a yellow pepper
1 romaine lettuce
1 red onion
1 lemon
Half a purple cabbage
2 tortilla wraps
Half a tsp of garam masala
Black pepper
1 tsp of mixed herbs





Method
  • Fry the onion and pepper in a frying pan with 2 tblsp of oil until they begin to golden.



  • Add the vegan mince, and add the tomato puree.



  • Stir for 5 minutes, then add half a tin of chopped tomatoes.



  • Stir, and leave to simmer for 10 minutes.

  • Add the rice to a saucepan of boiling water and leave to simmer for 10 minutes.

  • Chop some purple cabbage and add to the rice for the another 5 minutes.

  • Put the flour tortilla on a plate.



  • Chop the romaine lettuce and the other half of the onion.



  • Add the rice and the now cooked veggie meat mince.




  • Top with mozarella and the lettuce and onion.





  • Finally pour over some guacamole, spicy salsa and sqeeze of lemon juice.
