Prosciutto feta and zucchini fettuccine

A little bit fancy, this dish is very simple and very quick to make. The tart lemon and creamy feta lend the dish a dash of zing, while the zucchini and pine nuts offer a touch of sweetness. Ideal for a mid-week dinner or as part of a dinner party, this dish is sure to impress.


Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
500g fettuccine
90ml olive oil
Finely grated zest and juice of 1 lemon
6 large cloves garlic, finely chopped
2 zucchini, thinly sliced using V-slicer
1 tablespoon dried marjoram
1 tablespoon dried dill
ΒΌ fresh parsley, chopped
2 tablespoons butter
200g feta cheese, crumbled
100g prosciutto, thinly sliced
Pine nuts, lightly toasted
Salt and pepper, to taste






Method
  • Cook pasta according to packet instructions. Drain and toss with a dash of oil.
  • Heat olive oil in frying pan over low heat.
  • Add garlic and stir until fragrant.
  • Add zucchini, lemon juice and zest.



  • Cook for about 4 minutes or until zucchini softens. Stir occasionally.
  • Add marjoram, dill, parsley and butter, and stir to combine.
  • Add drained pasta and stir to combine.



  • Toss with proscuitto and feta, and top with pine nuts.
  • Season with salt.
  • Serve immediately.
