Protein Balls with Goji Berries
If you're wondering what is the difference between my raw cacao balls and these that look very similar, the difference is these contain protein.
So why eat protein balls? If you're working out at the gym it is good for you to have protein shakes and even snacking on protein balls is good for you.

Preparation Time: 15 minutes
Cooking Time: 0 minutes
Makes: 25-30 small balls
Ingredients
3 tablespoons of coconut oil
4 tablespoons of goji berries
2 tablespoons of raw cacao
200 g pitted dates
2 tablespoons of chia seeds
1/2 cup of desiccated coconut
200 g of almonds
1 scoop of chocolate protein powder
Method
Cut dates in to smaller pieces about 2-3 pieces.
In a mug add some boiling water and the dates. This will soften them.
Soak dates to soften them
After 2 minutes drain the dates and add to a processor with all remaining ingredients except for the coconut.
Add all ingredients to the processor except the coconut
Process for about 1-2 minutes. Turn off the processor and scrape down the sides and repay the process until the nuts have broken up and the mixture has combined.
Mixture is ready to roll when it looks like this
Take teaspoons of mixture and with your hands roll into balls and place on a plate.
When all balls have been rolled out wash your hands thoroughly to get off all the mixture and they are ready to roll in the coconut.
Make sure all balls are about the same size
Place coconut into a bowl and pop one to two balls in at a time. Shake the sides of the bowl to gently coat the balls in coconut.
Place balls into a container and keep in the fridge.
Protein balls should be good for up to a week after making them.
