Puff Pastry Samosas

This recipe has been a constant favourite with my whole family. Authentic Indian samosas are usually fried, but I love to use puff pastry as it is easy to work with and can be baked in the oven for a deliciously flaky meal.



Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 16 servings

Ingredients
2 potatoes
1 tbs olive oil
1 tbs curry powder
1 onion, diced
2 cups chopped cabbage
1/2 cup green peas
4 sheets frozen puff pastry

Method
  • Bring a medium pot of water to the boil.
  • Peel and thickly dice the potatoes. Add to the boiling water and cook for 15 minutes, or until soft.
  • Preheat the oven to 180C/350F.
  • Remove the puff pastry sheets from the freezer and spread out on the bench to defrost.
  • Add the oil, curry powder, onion and cabbage to a frying pan and fry over a medium heat, stirring, for 5 minutes.
  • Add the peas and cook for another minute or until the peas have started to defrost. Remove from the heat.
  • Drain the potatoes and mash, and add to the fried cabbage mixture, mixing it all together well.
  • Cut the puff pastry sheets into quarters so you end up with 16 squares.
  • On the middle of each square, place 1-2 tbs of the vegetable mixture.

  • Fold the puff pastry over the mixture to create a triangle. Press down on the edges to seal.
  • Place the triangles on a greased baking tray.
  • Bake for 20 minutes or until golden brown.
  • Let cool for a few minutes before serving with your choice of dipping sauce.
