Puff Pastry Samosas
This recipe has been a constant favourite with my whole family. Authentic Indian samosas are usually fried, but I love to use puff pastry as it is easy to work with and can be baked in the oven for a deliciously flaky meal.
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 16 servings
Ingredients
2 potatoes
1 tbs olive oil
1 tbs curry powder
1 onion, diced
2 cups chopped cabbage
1/2 cup green peas
4 sheets frozen puff pastry
Method
Bring a medium pot of water to the boil.
Peel and thickly dice the potatoes. Add to the boiling water and cook for 15 minutes, or until soft.
Preheat the oven to 180C/350F.
Remove the puff pastry sheets from the freezer and spread out on the bench to defrost.
Add the oil, curry powder, onion and cabbage to a frying pan and fry over a medium heat, stirring, for 5 minutes.
Add the peas and cook for another minute or until the peas have started to defrost. Remove from the heat.
Drain the potatoes and mash, and add to the fried cabbage mixture, mixing it all together well.
Cut the puff pastry sheets into quarters so you end up with 16 squares.
On the middle of each square, place 1-2 tbs of the vegetable mixture.
Fold the puff pastry over the mixture to create a triangle. Press down on the edges to seal.
Place the triangles on a greased baking tray.
Bake for 20 minutes or until golden brown.
Let cool for a few minutes before serving with your choice of dipping sauce.
