Puffed Rice Balls

These crispy balls are a cross between an LCM bar and peanut butter - but healthy. The puffed rice balls are crunchy, peanut-buttery, and bite-sized — perfect for packing in lunch boxes or for satisfying a sweet tooth. You could press into a tin and make bars but I love having perfect bite sized balls.



Preparation Time: 25 minutes
Cooking Time: 0 minutes
Makes: 12 servings

Ingredients
1 cup puffed rice
3 tbsp honey
1/2 cup crunchy peanut butter or walnut butter
10 cashews
1 tsp. vanilla extract



Method
  • In a medium bowl, mix together the peanut butter, honey, and vanilla essence.

  • Add in the puffed rice and chopped cashews and stir together.



  • Once combined refrigerate the mixture for 10-15 minutes, this makes the mix easy to roll.

  • Remove from the fridge and start rolling tablespoon sized balls. You should end up with around 12 depending how many you eat whilst making.

  • Keep in the fridge if they don't all get eaten!
