Pulled Beef and Guacamole

This delicious, tender pulled beef with guacamole and flat bread makes a great share platter. The dry rub gives this beef great flavour.

This is a great meal served at parties as the lettuce cups and flat bread make it easy to load the toppings, roll and eat. Serve with salad.

Preparation Time: 10 minutes (plus 8 hours marinating time)
Cooking Time: 2 1/2 hours
Serves: 4 - 6

750 g casserole beef

For the dry rub
1 tbsp paprika
1 tbsp coriander
1/2 tbsp cumin
1 tbsp oregano
2 tsp chilli
2 tbsp sugar
1 tsp cracked pepper
1/8 tsp salt

For the braising liquid
2 bay leaves
400 g tin tomatoes
4 - 5 large tomatoes, diced
2 cups water
1 beef Massel stock cube
1/4 cup red wine vinegar

For the guacamole
1 ripe avocado
1 lime, finely zested and juiced
1/8 tsp cumin
1/2 cup coriander, finely cut
Salt and pepper
1 tbsp olive oil
2 cloves garlic, crushed (exclude for low FODMAP)
1 birdseye chilli, deseeded and finely cut
1 small onion, finely diced (exclude for low FODMAP)
1 tomato, finely diced

To serve
2 - 3 baby cos lettuce
1 red capsicum, finely sliced
1 carrot, finely sliced
1 tomato, diced
1 avocado, sliced
4 - 8 pita breads, cut into triangles

Preheat the oven to 160 degrees. Place an oven proof frypan on high.
Make 1 cm deep slices, 1 - 2 cm apart, on both sides of the beef.
Combine the dry rub ingredients. Coat the beef, pushing the rub into the cuts.
Lightly rub oil on the beef, place in the frypan and sear both sides until brown.

Coat all the cuts and crevices with dry rub and sear both sides of the beef to lock in the flavour

Add the braising liquid ingredients and stir.
Bake the beef uncovered for 2 1/2 hours.
Uncover, turn up the oven to 220 degrees and bake for an additional 30 minutes.

The braising liquid will reduce and darken as it cooks and caramelises

In the meantime, combine the guacamole ingredients with a fork or blender to desired consistency and refrigerate until ready to serve. 

Making the guacamole
I mix all the guacamole ingredients before adding the tomato and onion

Remove the beef from the oven, use two forks to pull the pork apart, rest in the sauce for 15 minutes.
Arrange the cos lettuce leaves, salad and pita bread on a plate.
Place the pulled beef into the lettuce cups and serve with a salad and guacamole. Enjoy!

Check your beef every 1/2 hour or so to make sure there is a small amount of liquid while baking. Top up with water as required.

I am frustrated as a recipes showed 3 likes and I clicked on it for the 4th and it told me I had clicked already . I hadn't seen the recipe before and only went not the web this morning. !!!
I think its a great recipe and would like to acknowledge that !!PLEASE
