Pulse Stir Fry

I love stir fries. The different seasonings mixed with the ingredients brings out fantastic flavours. My favourite stir fries are probably chicken or prawn, but on some occasions, I prefer to go the vegetable route. I made this recipe up myself, taking al my favourite pulses and throwing them together. It is a great vegetarian meal because the pulses provide a lot of protein that you can miss out on from not eating meat. Based on the brands I used, each serving should be about 322 calories.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 2 servings

130g tinned chick peas
130g tinned kidney beans
130g tinned butter beans
80g frozen edamame beans
3 tsp dried parsley
3 tsp paprika
1 vegetable stock cube
1 tomato
1 tsp soy sauce
40g broccoli sprouts
80g bean sprouts


Bring the edamame beans to the boil in a saucepan.
Add the chick peas, kidney beans, and butter beans, and simmer for five minutes before draining.
Chop the tomato and mix it with the pulses.
Crumble up the stock cube and mix in.
Cook the mixture in a frying pan, then add the broccoli and bean sprouts.
Stir in the parsley and paprika, then take off the heat and add the soy sauce.

Yeah, most stir-fries use noodles, but this one cuts out the carbs as well by substituting them with bean sprouts. Glad you like it.
I've never seen a vege-friendly stir fry like this before, looks great!
