Pumpkin and Chocolate Layered Pudding

This recipe features layers of pumpkin and chocolate chia pudding and it is a no cook one - it DOES however, have to be made the day before to allow the chia puddings to set. It is a great snack or even a healthy dessert for the whole family, and has no added sugar in it.

Decorate it with any fruit to make it more colourful, and serve with whipped cream to make it more decadent!

Preparation Time: 20 minutes plus overnight
Cooking Time: 0 minutes
Serves: 4

Ingredients
For the Pumpkin layer
2/3 cup pumpkin, pureed
1¼ cup milk
4 dates, soaked in warm water for 15 minutes
1 tsp vanilla
½ tsp cinnamon
¼ tsp ginger
1/8 tsp nutmeg
Pinch salt
¼ cup chia seeds
For the Chocolate layer
1½ cups milk
¼ cup cacao
4 dates, soaked in warm water for 15 minutes
1 tsp vanilla
Bit of salt
¼ cup chia seeds
Fruit, of your choice (optional)

Method
For the Pumpkin layer
  • Cook the pumpkin, and mash or blend it.

  • Pour out any liquid that gathers in the pumpkin.
  • You can see the liquid that has gathered in the pumpkin, despite it being drained before mashing


  • Combine all the ingredients except the chia seeds in a blender, and blend until fairly smooth.

  • Put the mixture into a bowl and add in the chia seeds. Stir.

  • Cover and put in the fridge overnight or at least 5 hours till it sets.

  • For the chocolate layer
  • Mix all the ingredients apart from the chia seeds in a blender.

  • Blend until smooth.

  • Put the mixture into a separate bowl, and add in the chia seeds. Stir.

  • Cover the put in the fridge overnight or at least 5 hours till it sets.
  • Both puddings after they are set


    To assemble
  • Spoon a layer of pumpkin pudding in the bottom of a large wine glass, or dessert dish - a long stemmed one looks nicer!

  • If using fruit, you can put a layer of whatever fruit you like after the first layer. I added blueberries at this stage.

  • Add a layer of the chocolate pudding.

  • Continue until you have the required amount in the dish or glass.

  • I topped it with a few grapes and more blueberries, and if I wasn't worried about calories, I would have shaved some dark chocolate over the top.

  • An absolutely delicious snack or dessert, especially for those who do not like over sweet food.
  • You can also put this in an ordinary dessert bowl and it still looks great
