Pumpkin and Rosemary Muffins

Enjoy a taste of the countryside with these delicious savoury muffins. With an extra dash of vanilla they will satisfy any childhood yearnings for sweetness too. Healthy and hearty on an crisp autumn day.



Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Makes: 12 servings

Ingredients
180g self-raising flour
130g wholemeal flour
1 tsp baking powder
tsp bicarbonate of soda
pinch salt
3 fresh rosemary sprigs, finely chopped
60ml/2fl oz vegetable oil
2 eggs, lightly beaten
100ml natural yoghurt
275ml milk
1 tbsp honey
1 tsp vanilla extract (optional)
240g cooked pumpkin, cubed (about 1/2cmx1/2cm)
Handful pumpkin seeds

Method
Pre-heat oven to 200 C

Sift together flours, baking powder and bicarb. soda. Add salt and chopped rosemary. Reserve a few handfuls of bran from the sieve.

In a seperate bowl, combine the wet ingrediants.

Fold the wet mixture into the dry ingrediants. Carefully stir in pumpkin.

Grease a 12-hole muffin tin or line with muffin cases.

Divide mixture evenly between muffin cases and sprinkle with reserved bran and pumpkin seeds.

Bake in oven for 20-25 minutes or until skewer inserted into centre comes out clean.

Enjoy warm with a cup of tea.


NOTE: Different types of pumpkin have different flavours. Try kent pumpkin for a tasty sweet flavour, or butternut for more subtlety
