Pumpkin Apple Curry
Serve this saucy curry in deep bowls, with spoonfuls of cooling plain yogurt and warm naan bread, or rice.

Cooking Time: 15 minutes
Makes: 4 servings
Ingredients
1 tsp vegetable oil
1 onion
3 garlic cloves
500 grams pumpkin
1 apple
800 grams potatoes
1 tbsp curry paste of choice
1 inch of fresh ginger
1 tsp tumeric
500 ml stock
2 bay leaves
Bread, rice and yogurt to serve.
Method
Heat the oil in a pan and fry the chopped onion until golden. Add in the chopped garlic, cored and de-seeded pumpkin and apple, and the chopped potatoes.
Stir in the curry paste, tumeric, diced ginger, and stock.
Bring to the boil, then simmer 15 minutes, stirring every 5 minutes.
Once the vegetables are soft, the curry is ready and will be very saucy. Continue to simmer until you have reached your desired consistency, keeping in mind there is supposed to be a lot of sauce!
Spoon over rice, or ladle into bowls, and dive in with some naan bread.
