Pumpkin asparagus and lentil curry

This is a low carb vegetarian recipe. Choose brands you like.

Preparation Time: 20 minutes
Cooking Time: 17 minutes
Serves: 2



Ingredients
1 teaspoon olive oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon curry powder
1 brown onion
1 zucchini
1 cup diced pumpkin
1 can brown lentils
1 bunch of asparagus



Method
  • Put olive oil, garlic and ginger in a saucepan
  • Dice the onion and zucchini and place in saucepan along with diced pumpkin
  • Microwave asparagus in 1 cup of water on high for 1min then add it and the water to the saucepan
  • Add lentils with water in the can to the saucepan and cook on medium heat for 15 minutes.
