Pumpkin Carrot Red Lentil Soup

Don't be fooled by the title, this soup is one of the tastiest I've ever made. The Red Lentils not only add substance and protein, they also create a wonderful silken texture.

Preparation Time: 15 minutes
Cooking Time: 1-2 hours
Makes: 6-8 serves

Ingredients
1T oil
1 brown onion, diced
2 cloves garlic, finely chopped
2 large carrots, roughly chopped
2 stalks celery, diced
1 leek, roughly chopped
1 potato, peeled and diced
700-800gm pumpkin (I use butternut squash)
1 cup red lentils
6 cups water (or chicken stock)
1 bay leaf
1T curry powder
1t cumin
Salt & pepper to taste

Method
-Heat oil in a large stockpot and add onion & garlic.

-Sweat for 3-4 minutes before adding carrots, celery and leek. Cook on a medium heat, stirring occasionally for a further 4-5 minutes.

-Add remaining ingredients and bring to the boil. Reduce heat and simmer for 1-2 hours, or until lentils have completely softened and vegetables are cooked through.

-Blend until smooth, adjust seasoning and serve.
