Pumpkin Feta And Rocket Salad

Roasted pumpkin, red onion and rocket; three of my favourite salad ingredients. I've combined them with some crumbly feta cheese and a delicious dressing for the perfect salad.

Serve like this in the centre of the table and let everyone serve themselves

Preparation Time: 10 minutes
Cooking Time: minutes
Makes: 4 servings

Pumpkin to make 1/2 cup diced pumpkin
1 teaspoon of minced garlic
1 tablespoon of olive oil
Pinch of salt
1/4 cup of crumbled feta cheese
1/4 cup walnuts
1/2 red onion
1 60g bag of rocket washed
1 teaspoon of whole grain mustard
1 teaspoon of honey
2 teaspoons of egg mayonaisse

Preheat oven to 180 degrees celsius.
Peel the pumpkin and cut into 2 cm cubes.
Add pumpkin to a bowl with garlic, salt and olive oil and toss to coat.
Line a baking tray with baking paper and roast pumpkin for 20-30 minutes.
Once pumpkin is cooked take out of the baking dish and allow to cool.

Transfer pumpkin to a bowl and allow to cool

In a large serving bowl add the washed rocket.
Thinly slice the red onion and place on top of the rocket.
Next crumble the feta cheese on top.
Chop walnuts in half and sprinkle over the salad.
In a small bowl mix the mayonnaise with the mustard and honey.

Dressing for the salad

Mix with a spoon until just combined. Taste the dressing. It will be good as is, but you can make it sweeter if you prefer by adding an extra teaspoon of honey.
Add the pumpkin once cooled and drizzle some dressing over the top or serve the dressing on the side.
You can toss the salad to mix.
