Pumpkin Frittata

Pumpkin frittata is a delicious meal your family is guaranteed to love. It's ideal as a light lunch or dinner served with salad.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 6

Ingredients
250 g butternut pumpkin
6 eggs
1/4 cup milk
1/2 - 3/4 cup grated cheese

Method
  • Preheat oven to 180C.
  • Grease a 20cm round cake tin.
  • Peel, deseed and slice the pumpkin into thin slices.
  • Place the pumpkin into the bottom of the prepared cake tin.

  • Whisk together the eggs, milk and most of the grated cheese (reserving some for the top) then pour into the cake tin, over the top of the pumpkin. Sprinkle the top with the remaining cheese.

  • Bake for 30 minutes or until set.
  • Turn out the frittata, making sure the top stays as the top.
  • Serve hot or cold with salad.
