A hearty hotpot, but ingredients you wouldn't usually expect to find in one.

Makes: 6 servings
Ingredients
1 pumpkin
2 sweet potatoes
½ onion
4 mackerel fillets
1 x 400g tinned tomatoes
1 x 400g tinned haricot beans
400ml vegetable stock
3 tbsp chia seeds
3 tbsp teff grain
100g porridge oats
Method
Peel, chop, and deseed the pumpkin.
Chop the sweet potato and onion.
Shred the mackerel fillets
Place everything in a pressure cooker and bring to the boil.
Simmer until the sweet potato and pumpkin are soft enough to stick a knife through.
