Pumpkin Pasta Bake
A delicious autumn or winter warmer.
Preparation Time: 25 minutes
Cooking Time: 70 minutes
Makes: 4 servings
Ingredients
Olive oil
1-2 medium onions, finely chopped
Handful fresh sage leaves
Handful of rosemary leaves
1 medium sized pumpkin
Pasta of your choice
Goats cheese
Parmesan
Bread crumbs
Method
Pre-heat your oven to 200c.
Chop up the pumpkin into small pieces and place on a well oiled baking tray.
Place the baking tray in the middle of the heated oven and allow the pumpkin to cook for around 40 minutes until soft.
When the pumpkin is cooked, allow it to cool a little and then mash it until into a soft paste.
Boil a kettle and place the pasta in a large pan.
Add some salt and pour the water over the pasta boiling according to pack instructions.
Take a large frying pan and a little oil, heat gently and add the finely chopped onions, stirring to caramelise.
Sprinkle the onions with a little salt and stir gently for around 10 minutes until they start to soften.
Add the sage and rosemary leaves to the pan and stir in with the onion at the lowest possible heat.
Add the pumpkin mix to the onions with a little water and stir to make a thick sauce.
Drain the pasta and stir in to the pumpkin and onion, making sure it is well coated
Grate a good portion of parmesan into the mixture and several lumps of goat's cheese, to taste.
Season the mixture and then transfer to a baking dish.
Top with breadcrumbs and bake for around 20-25 minutes.
