A great winter warmer. This pumpkin soup is so easy to make, full of nutrients and it best of all it tastes great.

Cooking Time: 20 minutes
Makes: 8 serves
Ingredients
1/2 of a pumpkin
1 white onion diced
2 medium carrots
Handful of cauliflower
2 stalks of celery
1/2 a sweet potato
Vegetable stock
Method
Sauté onion with a little olive oil in a large soup pan.
Add vegetable stock when onions are starting to soften.
Cut and peel all other vegetables into small pieces and add to the pan when boiling.
Turn down the heat to medium and cook until vegetables are soft.
Allow to cool slighty and place some of the vegetables and stock in a blender and blend until smooth.
Serve immediately. This always goes well with some toasted bread on the side.
