Purple Carrot and Rosemary Salad

A light, seasonal salad can 'make' any dish. Lift it, if you will, and this purple carrot medley does us that.

Preparation Time: 10 minutes
Makes: 2 servings

Ingredients
5 carrots
5 radishes
Sprig of rosemary
Handful of fresh spinach
Handful of kale (optional)
3 tblsp olive oil
Half tsp black pepper



Method
  • Peel the carrots using a standard peeling knife/ utensil and chop the radishes as finely as possible.



  • Rub the olive oil into the kale leaves - this will soften them and allow them to be absorbed into the system easier.

  • Tear the spinach and add it along with the kale to a bowl.



  • Add the remaining ingredients to the bowl.



  • Toss and serve.
