Organic purple carrots are a nutritional powerhouse and are higher in beta-carotene and phytochemicals than orange carrots and these nutrients are what help prevent cancer. You can cook them the exact same way that you cook 'normal' orange carrots and they taste great. Organic corn fed chicken has a slight yellow tinge and some argue, tastes nicer than non corn fed chicken, as the chicken sometimes is bred in a better living environment.
Ingredients 1 On the bone organic corn fed chicken
2 Organic purple carrots
1/2 An avocado
3 Cherry tomatoes
1/2 Cup of organic quinoa
2 tablespoons of coconut oil
1/4 Vegetable oxo cube
A squeeze of lime
A sprig of fresh rosemary
Pinch of black pepper
Squeeze a little juice out of a lime over chicken and rub in coconut oil, fresh rosemary and black pepper, add to oven for 45 minutes at gas mark 6.
After 20 minutes has passed, rinse quinoa in a sieve and boil in a pan with oxo cube.
Wash peel and chop carrots and coat in coconut oil, add to the same baking tray as chicken.
For the last 5 minutes of cooking time for the quinoa, chicken and carrots, chop up tomatoes and avocado.
