Quiche Tartlets

Entertaining and need some finger food that’s quick and easy to whip up? Why not give these quiche tartlets a go? They’re fluffy, tasty and very versatile.




Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 24 tartlets

Ingredients
2 sheets puff pastry, thawed
12 mini Roma or cherry tomatoes, halved
12 olives, halved
Handful baby spinach, chopped
100g prosciutto, fried
50g tasty chees, shredded
2 eggs, scrambled
20ml milk
Cracked black pepper, to taste


Method
  • Lightly grease 2 muffin trays.
  • Using a cookie cutter, or espresso cup, cut out 24 circles from puff pastry sheets.



  • Using fingers, press pastry into muffin trays.
  • Add half a tomato, half an olive and a teaspoon of prosciutto to each circle of pastry.



  • Tip: Substitute prosciutto with smoked salmon for a vegetarian variation.

  • Add milk to scrambled eggs and mix until combined.
  • Season with black pepper.
  • Pour about 2 tablespoonfuls of mixture into each tartlet.



  • Top with a sprinkling of tasty cheese.
  • Bake for 10-15 minutes, or until pastry puffs up and cheese appears lightly golden.
  • Cool on a wire rack for 5 minutes.

  • Enjoy.
