These creamy quiches, packed with capsicum and zucchini, make a perfect lunch, or a dinner side. These are made without pastry shells, but are just as good with a delicious, crusty pastry.

Makes: 6 servings
Ingredients
1 zucchini, grated
1/2 a red capsicum, chopped
50g fetta cheese, chopped
3 eggs
1/3 cup pouring cream
1/4 cup milk
1/2 cup grated parmesan
Method
Preheat the oven to 180 C. Lightly grease some small tart cases.
In a mixing bowl, whisk together the eggs, cream, milk, and parmesan.
Grate the zucchini, and chop the capsicum and fetta.
Spread the zucchini across each of the tart cases.
Top with capsicum, then add the fetta.
Spoon the egg mixture into each of the tart cases.
Bake for 15-20 minutes, or until golden brown.
