Quick fish fingers

These fish fingers make a lovely, tasty dinner. They're fun and easy to make with your children; just allot them a task in the production line and they'll love being involved in cooking their own dinner.

Golden cod fingers, but salmon and haddock also make delicious fish fingers


Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4-6 fish fingers

Ingredients
200g fresh cod fillet, skinned and boned
1 egg, beaten
1 large slice of bread (white, brown or 50/50)
2 tbsp flour
Pepper to season
1 tsp olive oil



Method
  • Pre heat oven to 200 centigrade/ 180 centigrade for fan ovens. Brush a baking tin with the olive oil.
  • Lightly toast the bread, then whizz it up in a blender for a few minutes until you have fine breadcrumbs. Place them in a shallow dish, adding a sprinkling of pepper.
  • Crack the egg into a shallow dish and beat it lightly.
  • Spoon the flour onto a chopping board or into a shallow dish.
  • Cut the fish into roughly equal strips.

  • Toss the fish slices into the flour, then dip them into the egg making sure you coat all sides.



  • Roll the fish strips into the breadcrumbs, coating all sides evenly.

  • Place on the baking dish and transfer to the oven, cooking for 20 minutes until golden.
