Quick Pizza Bread Yeast Free

Tasty, yeast free, light, fluffy and great for lunch, parties or picnics. This bread has oregano, basil, pizza ingredients and pockets of melted cheese. I added ham, pineapple, olives and capsicum but you can use any pizza ingredients.

Preparation Time: 10 minutes
Cooking Time: 25-30 minutes
Serves: 1 pizza bread or 8 generous portions

Ingredients
2 cups self-raising flour (gluten free, if required)
1 tsp baking powder
1/8 tsp salt
1 tbsp oregano
1/2 tbsp dried basil
60 g cold butter (or nuttelex if lactose free)
1/2 cup chopped ham
1/2 cup kalamata olives, cut
1/2 cup chopped pineapple
1/2 cup chopped red capsicum
3/4 cup grated cheese, mozzarella or cheddar (lactose free, if required)
1 cup milk (lactose free, if required)

Method
  • Preheat the oven to 200 degrees. Line a baking tray with baking paper.
  • Whisk the flour, baking powder, salt, oregano and basil to combine.
  • Add the butter and use fingertips to combine until it resembles breadcrumbs.
  • Put the ham, olives, pineapple, capsicum and 1/2 cup cheese into the flour mixture. Stir to combine.

  • Add 3/4 cup milk and use a knife to mix the flour mixture until just combined, take care not to overwork the dough.
  • Turn the dough out on to a lightly floured bench top and knead until just combined.
  • Form a 20 cm circle and place on the baking tray.

  • Brush the dough with the remaining milk.
  • Spread 1/4 cup of cheese evenly on top.
  • Bake for 20-25 minutes or until the bread turns brown on the top.
  • Serve warm.
