Sometimes the simplest dishes are the tastiest. This quick quinoa lunch is a breeze to prepare and even easier to eat.

Ingredients
Half a cup of red quinoa
1 tsp Buillion vegetable stock
Creamed coconut
2 garlic cloves
Half a spring onion
5 pitted green olives
A handful of alfalfa sprouts

Method
Add the stock to a saucepan of boiling water. Wash the quinoa and add to the saucepan. Turn the heat to a simmer and cover for 10 minutes.
Chop the garlic and spring onions and add to the nearly-dry quinoa. Sitr and cook on a medium heat for 5 minutes.
Add the creamed coconut and stir.
Place the olives and alfalfa sprouts on the plate and add the quinoa.
