Quick Satay Chicken Skewers

A perfect addition to any bbq, picnic or lunch box, these tasty chicken bites also make a great starter or canap├ęs.

The satay marinade is so quick and easy and very family-friendly. I make it with quite a lot of peanut butter to make a thick marinade which gives a good coating to the chicken. My three year old isn't a big fan of poultry and meat but he loves these skewers and particularly enjoys helping me make them.



Preparation Time: 5 minutes plus 30 minutes to marinade chicken
Cooking Time: 6-8 minutes
Makes: 4 skewers

Ingredients
1/2 garlic clove, crushed
2 tsp fresh lime juice
2 tsp dark soy sauce
2 tsp honey
6 tsp smooth peanut butter
2 small chicken breasts

Method
  • Put the garlic, lime juice, soy sauce, honey and peanut butter in a bowl and mix together to form a thick paste.


  • Flatten the chicken breasts by covering in cling film and beating with a rolling pin and then cut into strips.

  • Add the chicken to the satay marinade, mix to coat the chicken and then place the bowl, covered, in the fridge for at least 30 minutes.
  • Place the skewers in water for 30 minutes.


  • Preheat the grill on high and line a grill pan with foil (if cooking on bbq then place straight onto rack).
  • Thread the marinated chicken onto the skewers and lay on the foil. Add any leftover marinade to the chicken and then grill for 3-4 minutes on each side.

  • Enjoy hot or cold.
