Quick Self Crusting Quiche Lorriane

Delicious, quick and easy quiche on the table within 30 minutes. Perfect if you need something in a hurry and do not have the time to make pastry. This is my new go to if unexpected visitors arrive for lunch. Serve at parties, barbecues, or for brunch or lunch. This tasty quiche can be made low FODMAP, gluten and lactose free.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 1

Ingredients
1 cup chopped ham (or bacon if you prefer)
1 small brown onion, cut finely (exclude for low FODMAP)
1 1/2 cups grated cheese (lactose free if required)
1/3 cup self raising flour (gluten free if required)
Salt and cracked pepper
4 eggs
1 1/2 cups milk

Method
  • Preheat the oven to 200 degrees. Line a quiche tray or pie dish with baking paper.
  • Add ham, onion, cheese, salt and pepper to taste, in a quiche tray and stir to combine.

  • Add the flour to the ham, onion and cheese mixture and toss to combine.
  • Beat the eggs and milk to combine and pour over the flour coated ham, onion and cheese mixture. Do not stir.

  • Bake the quiche for 20-25 minutes, until the quiche is golden.
  • Cool and serve warm or refrigerate for later.

    Tips
  • This quiche also tastes great with cherry tomatoes halved and pushed into the mixture.
  • Pour the mixture into lined muffin trays for mini quiches.
