Quick Spiced Bean and Tomato Pasties

These quick spiced bean and tomato pasties are fast and easy to whip up and really hit the spot. They are great for a light lunch or dinner and can be served with a simple salad or vegetables.

Preparation Time: 20 minutes
Cooking Time: 19 minutes
Makes: 4 pasties

1 sheet of puff pastry
1 garlic clove
1/2 brown onion
1 chilli
100 grams quality tinned Italian tomatoes
1 Tsp paprika
1 tsp basil leaves
1tsp oregano
Salt and pepper to taste
100 grams of mixed beans

Sauté the chopped onion and garlic over a high heat until browned. Add in the spices, tomatoes, chilli and season. Once boiling reduce the heat and simmer until cooked down. Blend.

Remove the sauce from the heat and stir in the mixed beans.

Cut your sheet of pastry into four squares, or any shape you like, and spoon 1-2 tbsp of bean mix into each one. Just off centre is best for easy folding.

Fold the pastry over the beans and fork the edges. Some people like to put a wash on pastry, but I did not and they turned out lovely and golden.

Prick each pasty a few times and pop in a 180C preheated oven for 18-20 minutes of until golden and crisp.

Serve with a simple salad and eat hot!
