Quick Spinach, Ham and Cheese Filo Quiche

Easy, delicious and on the table in 25 minutes.

This easy and delicious quiche is full of spinach and tastes fantastic. The filo is a fun and lighter alternative to pastry and is easy to use.

It can be made lactose free or vegetarian. Serve warm or cold for brunch, lunch or dinner.

25 Minute Spinach, Ham And Cheese Filo Quiche

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 8 - 12 (depending on size)

300g ham, cut into strips (exclude for vegetarian option)
400g baby spinach
6 eggs
1 tbsp whole grain mustard
250 g grated cheese (lactose free if required)
8 sheets filo pastry, thawed
1/4 cup melted butter (or nuttelex if lactose free)

You will need
A 24cm pie tin

Preheat the oven to 180 degrees. Line a pie tin with baking paper.
Beat the eggs and mustard, stir in the cheese and set aside.
In a frypan, cook the ham on high until caramelised.
Add the spinach, turn down the temperature to low and stir until wilted. Take off the heat and set aside to cool while you make the base.

Cook the spinach in the pan until wilted

Layer the pie tin with filo sheets making sure there is an overhang. Brush with butter between layers.

Add the spinach and ham to the egg mixture and stir to combine. Pour onto the filo base.

Ready for baking

Bake for 20 minutes or until set.
Serve warm or cold.
