Quince Jam
Quince jam is a beautiful, fragrant and versatile jam. It's perfect with hard cheeses, bread and scones. It works well with savory and sweet dishes and reminds me of Spain.
Preparation Time:10 minutes
Cooking Time: 120 minutes
Makes: 4 jars
Ingredients
5 quince
4 1/4 cups water
1/4 cup lemon juice
1 Tbsp lemon zest
4 cups sugar
Method
Prepare the quince by washing to remove the fuzz. I don't remove the skin as it has a lot of natural pectin but you can if you wish. Cut the quince into chunks and discard the core.
With and without fuzz
Pour the water into a large, wide saucepan and bring to the boil. Add the quince, lemon juice and lemon zest. Reduce heat to a simmer and cook until the quince is soft, about 10 minutes.
Once the fruit is soft blend with a handheld blender then add in 2 cups of sugar, bring to the boil and stir to dissolve the sugar, taste and add more as needed.
Lower the heat and cook uncovered, stirring occasionally until the quince jam turns pink, (just like magic). This will take about 30-50 minutes.
Once pink ladle the jam into hot sterilized jars and seal.
Once sealed wipe down the sides and allow to cool. Once cool your jam is ready to eat! Give as gifts, or enjoy with cheese, on toast , with scones or bake into breakfast bars!
