Quince Jam

Quince jam is a beautiful, fragrant and versatile jam. It's perfect with hard cheeses, bread and scones. It works well with savory and sweet dishes and reminds me of Spain.



Preparation Time:10 minutes
Cooking Time: 120 minutes
Makes: 4 jars

Ingredients
5 quince
4 1/4 cups water
1/4 cup lemon juice
1 Tbsp lemon zest
4 cups sugar



Method
  • Prepare the quince by washing to remove the fuzz. I don't remove the skin as it has a lot of natural pectin but you can if you wish. Cut the quince into chunks and discard the core.

  • With and without fuzz


  • Pour the water into a large, wide saucepan and bring to the boil. Add the quince, lemon juice and lemon zest. Reduce heat to a simmer and cook until the quince is soft, about 10 minutes.



  • Once the fruit is soft blend with a handheld blender then add in 2 cups of sugar, bring to the boil and stir to dissolve the sugar, taste and add more as needed.



  • Lower the heat and cook uncovered, stirring occasionally until the quince jam turns pink, (just like magic). This will take about 30-50 minutes.



  • Once pink ladle the jam into hot sterilized jars and seal.

  • Once sealed wipe down the sides and allow to cool. Once cool your jam is ready to eat! Give as gifts, or enjoy with cheese, on toast , with scones or bake into breakfast bars!
