Quinoa Avocado Sushi

Peru meets Japan in this fun fusion dish, which is perfect for vegans, vegetarians and is also gluten free. Traditional Japanese sushi is made with white rice, however using the superfood quinoa adds a healthy element and something unusual and different for children's lunch boxes or an alternative afternoon snack. This Sushi tastes so delicious you won't even know you're eating quinoa.

Quinoa Avocado Sushi

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 2 servings


3 sheets sushi nori (seaweed)
1 cup raw quinoa
1 avocado
1 Carrot
1 cucumber
3 cherry tomatoes (optional)
3 tablespoons soy sauce (for dipping)


Cook the raw quinoa in 2 cups of boiling water until the water is completely absorbed (as you would for cooking rice by the absorption method). Allow the cooked quinoa to cool.

Lay the quinoa out flat

Lay out the sheets of sushi nori flat and place the cooked quinoa in a line at one end of the seaweed.

Roll the seaweed

Slice the avocado, carrot, tomato and cucumber in long thin strips, then place gently on top of the cooked quinoa.

Cut the roll into bites

Roll the quinoa and vegetables up inside the sushi nori and cut the roll into bite size rounds.

Vegetarian sushi, vegan
Delicious quinoa sushi

Serve with soy sauce in a dipping bowl on the side for a healthy lunch time side dish or for a protein packed afternoon tea. Enjoy.
