Quinoa Comfort Food Pudding

A nourishing bowl of dessert...or even a make-ahead brekky for busy mornings.

This is a nutritious alternative to white rice pudding with more vitamins, minerals, fibre, and protein. The sweetness comes mainly from fruit.

Preparation Time: 0 minutes
Cooking Time: 25 minutes
Makes: 4 to 6 servings

Ingredients
1.5 cups water
3/4 cup quinoa
1.5 cups milk
1/4 cup sultanas
1 large ripe banana
1 tablespoon honey (or to taste)
2 teaspoons butter
1/2 tsp vanilla
pinch cardamom
1/4 cup pistachios

Method
  • Simmer water, sultanas and quinoa for about 15 minutes, or until the water has been absorbed

  • Cooked quinoa and sultanas

  • Using a blender, combine remaining ingredients except for pistachios. (You could also mash by hand if you want.)
  • Add to quinoa and cook for about 10 minutes. It will thicken.

  • Cooked and ready to serve

  • Meanwhile, toast pistachios in the microwave on high for about 1 minute, checking and stirring partway through (they can burn quickly).
  • To serve, spoon into bowls and sprinkle pistachios on top.

  • Enjoy
