Quinoa Porridge

Mmm... Quinoa porridge...

This is one of our go-to breakfast-for-dinner recipes as it is so nutritionally dense and also so undeniably comforting and easy on the tummy.

You can eat this warm or cooled, whatever floats your boat, and feel free to top with some fresh berries/chopped banana/a drizzle of maple syrup etc. if so takes your fancy.



Cooking Time: 15 minutes
Serves: 1

Ingredients
1/4 cup (45g) quinoa, dry
1/4 cup cashews
1/4 tsp ground cinnamon
1/4 tsp vanilla extract
1 cup rice milk

Method
  • Place quinoa and 1/4 cup water in a saucepan and bring to the boil. Reduce to a simmer and cook for 5-10 mins or until water has absorbed.



  • Stir through cashews, cinnamon, vanilla and milk, and simmer gently for a further 5-10 mins.



  • Remove from heat and serve either warm or set aside to enjoy cool.
