A refreshing healthy salad to serve for lunch, as a starter or a side to a main meal. It goes particularly well with avocado and prawns.

Makes: 6- 8 servings
Ingredients
160g quinoa
500ml water
195g sweetcorn
1 x 400g tinned chickpeas
4 sticks of celery
6 spring onions
50g rocket
1 tbsp olive oil
Method
Put quinoa and water and a saucepan, bring to the boil, and then simmer for 15 minutes until the water is absorbed.
Drain the chickpeas and mix with sweetcorn and quinoa.
Blitz the spring onions, rocket, celery, and olive oil in a food processor and then mix into the quinoa.
