Quinoa Rocket Salad

A refreshing healthy salad to serve for lunch, as a starter or a side to a main meal. It goes particularly well with avocado and prawns.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 6- 8 servings

Ingredients
160g quinoa
500ml water
195g sweetcorn
1 x 400g tinned chickpeas
4 sticks of celery
6 spring onions
50g rocket
1 tbsp olive oil

Method



  • Put quinoa and water and a saucepan, bring to the boil, and then simmer for 15 minutes until the water is absorbed.



  • Drain the chickpeas and mix with sweetcorn and quinoa.



  • Blitz the spring onions, rocket, celery, and olive oil in a food processor and then mix into the quinoa.
